Baked Chicken Oregano
Ingredients:
2 – 2½ lbs. Chicken cutlets thinly sliced
½ cup lemon juice
⅓ cup olive oil
3 large garlic cloves minced
1 tsp. Parsley (optional)
2 tsp. Oregano
salt and pepper
½ cup white wine
Instructions:
Origin of recipe: Nancy’s neighbor, Sarah Mazzone; she had made it for Lisa’s christening and we all loved it. Sarah has since moved to San Diego and oddly enough right around the corner from Angela’s old house in Carlsbad….small world!
2 – 2½ lbs. Chicken cutlets thinly sliced

salt and pepper
½ cup white wine
Instructions:
- Cut chicken into bite size pieces and set aside.
- In small saucepan, combine oil, lemon juice, oregano, parsley, garlic, salt, pepper and wine. Bring sauce to a boil and simmer two minutes. Pour sauce over chicken.
- Cover tightly with foil. Bake at 350 degrees for 40 minutes on center oven rack.
