Buche De Noel
Cake
1 cup walnuts, chopped fine
¼ cup flour
¼ cup unsweetened cocoa
5 large eggs, separated
½ teas. salt (cut in half if desired)
¼ teas. cream tartar (may omit)
⅔ cup sugar
½ teas. vanilla
Filling
1 cup heavy cream
¼ cup powdered sugar
½ teas. vanilla
¼ cup chopped cherries
Glaze
2 teas. unsweetened cocoa
2 teas. melted butter
1½ teas. boiling water
now stir in:
1 tablespoon Caro syrup
¾ cup powdered sugar
Instructions:
Optional: Write Happy Holidays or Merry Christmas on top
Origin of recipe: From Gourmet magazine in the 70’s, which became a Binger tradition to make for the holidays… started by Nancy (Amoroso) Binger when Chris, Tracy, and Wendy were very young. The children would help decorate the top of the log for the holidays! A very light cake and worth the trouble to wow your guests!

Instructions:
- Beat egg whites, salt and cream of tartar until stiff, then beat in ⅓ cup of sugar. Set aside.
- With same beaters, beat egg yolks, ⅓ cup sugar and vanilla until thick. Pour over egg white mixture and fold.
- Now add chopped nuts, ¼ cup flour and cocoa mixture and fold again.
- Line a large cookie sheet with waxed paper and grease bottom.
- Bake at 350 degrees for 20 minutes or until top springs back.
- Place cake on towel lined with powdered sugar and roll in jellyroll like fashion and let cool completely.
- When cool, peel off wax paper and fill with filling and then top with glaze.
- Decorate with cherries; use fork to make glaze look like a log.
