Cucumber Relish
Ingredients:
Cucumber
Carrots
Onion
Garlic clove (slivered)
Oregano
Oil
White vinegar

Instructions:
- Peel, slice and remove seeds from cucumber.
- Salt and place in a colander.
- Place weight on cucumber to remove water.
- Mix cucumber, carrots, onion, small amount of oil (1 to 2 tsp.), oregano to taste, small amount of vinegar.
- Mix together and place in glass container and add vinegar to top of jar.
- Place in refrigerator. Use as needed.
- If vinegar is too strong, use ½ water and ½ vinegar. (cucumber will not repeat on you!)
