English Pea Purée
Ingredients:
½ cup extra virgin olive oil
1 leek, chopped (use white portion and 4” of green)
½ white onion, chopped
4 garlic cloves, smashed
½ cup fresh English peas (frozen peas can be substituted)
salt and pepper to taste
Instructions:
- Heat olive oil in 3 qt. saucepan over med. Heat. Add leek, onion and garlic. Cook 5 minutes, stirring occasionally.
- Add peas. Cook until soft, about 3 minutes, stirring occasionally.
- Strain and save the oil.
- In a food processor, purée the pea mixture. Add enough oil so that the consistency is that of mashed potatoes.
- Add salt and pepper.
