Hearty Chicken and Orzo Soup

- 8 cups Low fat chicken broth
- Cooked pieces of chicken, without bones:
- equals about 2 large breasts, legs and/or thighs
- 3 carrots, peeled, sliced or chopped into small pieces
- 3 celery stalks, chopped into small pieces
- 1 onion, chopped large pieces
- 2 teaspoons salt
- 2 garlic cloves, chopped
- 1 bay leaf
- 2/3 cup pasta (orzo or bow ties)
- Chopped fresh parsley
Instructions:
- Start boiling water and cook the pasta separately.
- Combine the broth, chicken and next 6 ingredients in large Dutch Oven pot. Bring to boil. Reduce heat, cover and simmer until chicken is tender, about 35 minutes. Season soup with salt and pepper.
- Ladle soup into bowls. Sprinkle with parsley and serve.
