Mango Salsa Recipe
Fresh mango salsa is easy to make and delicious served over halibut or salmon or as the salsa in fish tacos. This recipe comes from Marth Sterwart Living’s new magazine Everyday Food.
Ingredients:
1 ripe mango, peeled, pitted, and diced (about 1 cup)
½ medium red onion, finely chopped
1 Jalapeño chile, minced (include ribs and seeds for a hotter taste if desired)
1 small cucumber, peeled and diced (about 1 cup)
2 Tbsp fresh cilantro leaves, chopped
2 Tbsp fresh lime juice
Salt and pepper to taste
Instructions:
- Combine all of the ingredients in a bowl.
- Season to taste with salt and pepper.

Paul and Nancy had tried a dish with mango salsa while visiting Nancy and Wally in Jupiter, Florida in January and she wanted to try and make some…used it the first time on cod cooked on the barbecue…great condiment served over fresh fish.
