Mussels in White Wine Sauce

Origin of Recipe: Jenny happened to be over one weekend that Wendy and Nancy had bought 10 lbs. of mussles at Restaurant Depot. She called her mom, Rosemarie, who gave us the recipe over the phone from Florida.
- 1 cup of white wine
- ¼ cup shallots
- 2 garlic cloves
- ½ cup fresh parsley, chopped
- 2 Tablespoon butter
Instructions:
- Mince ¼ cup shallots, 2 garlic cloves, ½ cup fresh parsley chopped, 2 Tbsp. butter
- Bring to simmer in a pan (About 3 min.).
- Increase heat to high and add mussels. Cover. Shake several times (About 8 min.). Note: Put pasta in at same time as mussels.
- Remove mussels from liquid and transfer to two large serving bowls.
- Add butter to pan and make sauce to pour over mussels.
