Sauteed Spinach With Garlic, Sun-dried Tomatoes
Ingredients:
1 10 oz. package of fresh spinach
3 tablespoons olive oil
3 garlic cloves, sliced
½ cup onions, chopped
½ cup sun-dried tomatoes
¼ cup sherry or Marsala wine
¼ cup fresh lemon juice
5 tablespoons butter
½ cup feta or Parmesan/Romano cheese
salt and pepper to taste
Instructions:
Hint: Great over pasta or serve sauce over grilled chicken cutlets and omit the pasta if you’re trying to cut down on “carbs”.
Origin of recipe: A great find that Nancy tried, which was on the back of a Noreast fresh savoy spinach bag on Oct. 1, 2003. Wow…would her mom be shocked if she knew she was eating cooked spinach; you never say never in this life!

Instructions:
- Over medium heat, sauté sliced garlic and onions in olive until golden brown, about 2 minutes.
- Add the butter and when melted add sun-dried tomatoes.
- Add sherry and lemon juice and reduce by a third (about 3 minutes)
- Add the spinach and cook covered until wilted.
- Add cheese and cook briefly until slightly melted (approximately 30 seconds).
- Add salt and pepper to taste. Enjoy!
