Calamari Salad (Frank's)

Note:Vinegar will toughen calamari so avoid!
Origin of recipe: Frank Amoroso who can rival Emeril or Michael Chiarella anytime! Great to use at our Christmas Eve Feast or a family buffet.
- 1½ lbs. cleaned calamari, including tentacles
- 1 onion minced
- 5½ cloves garlic, minced
- 1 jarmarinated artichokes, sliced into small pieces
- 2 stalks of celery minced
- 3.3 ounces of capers
- 1 jar roasted peppers, sliced into small pieces (same size as minced onion)
- 3 lemons, juice and rind
- 1 can black pitted olives, sliced into 1/8” thick rings
- ½ cup of extra virgin olive oil
- 1 teaspoon hot pepper sauce
Instructions:
- Boil pot of water sufficient to cook calamari. Insert calamari into boiling water. Cook for 2 minutes ONLY (overcooking will make rubbery). Remove and cool with cold water.
- Into a glass container, combine all ingredients except calamari. Slice calamari into rings about ¼” wide. Combine all and allow to marinate in liquids from artichokes, peppers, etc.)
