Baked Mahi Mahi With Bread Crumbs

Directions:
Serve fish and pasta with Trader Joe’s marinated artichokes or organic tomatoes sliced thin drizzled with Trader Joe’s Balsamic Vinaigrette.
- 2 defrosted pieces of Trader Joe’s Mahi Mahi
- ¾ cup Italian flavored bread crumbs
- ¼ cup of Trader Joe’s grated Romano or Parmesan. Cheese
- ¼ cup almonds, chopped fine in food processor
- salt and freshly grated pepper to taste
- ½ cup extra virgin olive oil
- ¼ pound Angel Hair pasta
Directions:
- In an ovenproof baking dish, pour ¼ cup of oil on bottom and tilt to cover entire bottom of dish. Place Mahi Mahiin the dish. Preheat oven to 350 degrees.
- In food processor, crush almonds until finely chopped, add in bread crumbs, grated cheese, the salt and pepper.
- Place bread crumb mixture on top of fish and the remainder distribute evenly on the bottom of dish.
- Drizzle ¼ cup of extra virgin olive evenly over fish and crumbs.
- Bake for 10 minutes.
- While fish is baking, prepare ¼ pound of angel hair pasta.
- When fish has baked for 10 minutes, remove from oven and place on serving platter.
- Remove ½ cup of the pasta water and mix with the crumbs remaining in the ovenproof dish.
- Mix with wooden spoon to create a soft “paste-like” mixture and pour over the drained pasta.
