Chive Vinaigrette
Ingredients:
1 medium garlic clove, peeled
2 teaspoons Dijon mustard
Salt and pepper to taste
¼ cup white wine vinegar
½ cup mild olive oil
1 tablespoon minced fresh chives

Instructions:
- Mince the garlic in a food processor fitted with the metal blade.
- Add mustard, ¼ teaspoon of salt, and ⅛ teaspoon of pepper.
- With motor on, add vinegar in a slow stream, then drizzle in the oil.
- Process 5 seconds.
- Transfer to a bowl or jar and add chives.
- Cover and set vinaigrette aside at room temp. (up to 4 hours)
