Gorgonzola Bites
Crunchy and salty, these are always a crowd pleaser. Yet, it’s almost embarrassing to admit how easy they are to make. They’re just as good with a fancy blue cheese, such as Gorgonzola, as they are with packaged crumbled blue cheese.
Ingredients:
1 sheet (8 ounces) frozen puff pastry
4 ounces Gorgonzola or other blue cheese, crumbled fine
Freshly ground pepper
Preheat the oven to 350 degrees.

Ingredients:
1 sheet (8 ounces) frozen puff pastry
4 ounces Gorgonzola or other blue cheese, crumbled fine
Freshly ground pepper
Preheat the oven to 350 degrees.
Instructions:
- Remove the puff pastry from the package and let it stand at room temperature until pliable (about 30 minutes); unfold it if necessary.
- Set the pastry sheet on a work surface and scatter the cheese over the pastry, distributing as evenly as possible.
- Grind a generous amount of pepper over the entire surface.
- Drape a piece of plastic wrap over the pastry and gently roll over the wrap with a rolling pin to press the cheese into the pastry (the cheese will not cover
- the entire surface.)
- Peel off the plastic wrap and cut the pastry into 1-inch squares or diamonds with a sharp knife; discard odd edges and ends.
- Transfer the pastry pieces, placing them about ½ inch apart, onto ungreased baking sheets.
- Bake until the pastries are puffed and golden, about 25 minutes.
- Let these cool before serving. (If made ahead, store the bites in an airtight container for up to 1 day)
