Marinated Shrimp

Note: Best if marinated the day before.
Origin of recipe: Arlene Binger Baer, Paul’s sister, and it has become a staple on Christmas Eve.
- 2 lbs. shrimp, peeled and deveined
- ¼ cup finely chopped parsley
- ¼ cup finely chopped shallots
- ¼ cup tarragon vinegar
- ¼ cup wine vinegar
- ½ cup olive oil
- 4 tablespoons Dijon mustard
- 2 teaspoons crushed red pepper, optional
- Salt and pepper to taste
Instructions:
- Boil shrimp until pink. DO NOT OVERCOOK–ONLY NEED 2-3 MINUTES.
- Strain cooked shrimp, transfer to bowl and mix all ingredients well.
- Serve cold.
