Pasta With Bread Crumbs, Raisins & Pine Nuts
Ingredients:
1 pound pasta
1 cup olive oil
4 cups seasoned Italian (we prefer Progresso) breadcrumbs
1 cup raisins
½ cup pine nuts
½ cup chopped sun-dried tomatoes packed in oil
4 tablespoons balsamic vinegar
4 tablespoons chopped fresh Italian parsley (optional)

Instructions:
- Cook pasta until al dentè.
- RESERVE 2 CUPS OF COOKING WATER BEFORE YOU STRAIN THE PASTA.
- Heat olive oil in skillet and cook breadcrumbs until golden, taking care not to burn them.
- Stir in raisins, pine nuts, sun dried tomatoes and balsamic vinegar.
- Place pasta in serving dish, add the reserved cooking water and toss.
- Cover with the breadcrumb mixture and sprinkle with parley.
