Pickled Cauliflower
Ingredients:
1 head cauliflower, broken in florets
Salt
Water
1 cup oil
½ cup cider vinegar
1 rib celery, including top, sliced thin
1 small onion, chopped
1 thick slice lemon
1 clove garlic, minced
¼ teaspoon peppercorns
¼ teaspoon mustard seed
1 bay leaf
⅓ cup chopped pimento
Instructions:
This recipe is the only way I can get most of the family to eat cauliflower…delicious!
Note: This recipe is so good that Nancy "West" Binger actually offered to email it to a woman in line behind her at a farm stand out in Aquebogue. It turns out that woman was one of Nancy "East" Binger's clients at her hair salon!

Instructions:
- Cook cauliflorets in ½ inch boiling salted water for 10 minutes or until fork tender, drain and set aside.
- Combine oil, vinegar, celery, onion, lemon, garlic, and other seasonings.
- Bring to a boil; pour over cauliflorets. Gently stir in pimento. Cover and chill.
