Shrimp Scampi

Origin or recipe: One of Nancy’s best friends, Elaine Duncan, who found it when they were all newlyweds, and they have used this recipe for over 36 years!! You will never find a better scampi recipe; and even if you have it out at a restaurant, this recipe has proven to be unbeatable. Bon Appetite! Enjoy!
For each serving mix thoroughly:
- 3 tablespoons melted butter
- 2 tablespoons olive oil
- ¼ teaspoon of salt, optional
- 1 small garlic clove, minced
- 1 tablespoon white wine
- 2 teaspoons minced parsley, optional
Instructions:
- Allow 6 jumbo shrimp for each serving.
- Split with scissors ¾ of the way down the back but do not remove shells.
- Arrange in individual ovenproof dishes or large baking dish.
- Place the cut side, spread open, and place so that the wide part is in the center with the tails sticking up in the air.
- Pour the mixture over the shrimp and bake in a preheated hot oven (400 degrees) for 8 minutes.
