Tiramisu
Ingredients:
6 egg yolks
½ cup sugar
⅓ cup blackberry brandy
2 cups (15 oz.) ricotta cheese
1 cup heavy cream, whipped
32 ladyfingers, split in half
¾ cup espresso coffee–add 2 oz. almond syrup to coffee
1 tablespoon unsweetened cocoa OR cinnamon if you prefer Chocolate Curls (optional)

*Note...Chris and I worked on this one together for his “sendoff party” the day before he moved to San Francisco in April of 1996. The blackberry brandy was added in as a fluke but made the filling! Everyone enjoyed it, much to our surprise. (It’s great having these guys in the kitchen.)

Instructions:
- In top of double boiler, whisk together egg yolks, sugar and brandy. Place pan over simmering water. cook, whisking constantly, until mixture is thickened, abut 2-3 minutes. Cool.
- In large bowl of electric mixer, beat yolk mixture and ricotta cheese on medium speed until blended.
- Fold in whipped cream next.
- Place 32 ladyfinger halves in bottom of 13 x 9 inch pan, cut side up.
- Brush with half of the coffee; spread with half of ricotta mixture. Repeat layers.
- Chill 2 hours.
- Just before serving, dust with cocoa; cut into squares.
- Garnish with Chocolate Curls.
Chocolate Curls
- Combine ½ cup semisweet chocolate chips and 2 teaspoons shortening in small microwavable bowl.
- Microwave at HIGH (100% power) for 1 minute.
- Stir until chocolate is melted.
- Spread evenly in thin layer on small cookie sheet. Cool.
- Hold small pancake turner upside-down at a 45 degree angle to cookie sheet.
- Run pancake turner across chocolate, allowing chocolate to curl.
