Zucchini Cake
Ingredients:
2 cups sugar
1 cup corn oil
3 teaspoons vanilla
3 eggs
1 teaspoon baking powder
2 teaspoons baking soda
2 cups fl our
3 teaspoons cinnamon
½ teaspoon salt
Instructions:
Origin of recipe: Out East from the other side of our family.....in Aquebogue, from Nancy Elaine Binger, Wally’s wife. It became the “must make” recipe in the summers at the beach house when the cousins were all young and always at Tracy’s request…the only way we can get him to eat zucchini, however he doesn’t like it with raisins or nuts added in, but we do!

Instructions:
- Mix sugar, oil, vanilla, eggs.
- Add 2 cups grated zucchini.
- Add dry ingredients.
- Mix well.
- Optional: stir in 1½ cups chopped nuts and/or ¾ cup raisins.
- Grease and flour a tube or bundt pan and bake at 325 degrees for 50 minutes.
