Lemon Delicious
Ingredients:
60 grams (2 oz.) butter
½ cup sugar
pinch of salt
½ cup self-rising fl our
grated rind and juice of one lemon
2 large eggs, separated
1¼ cups milk
Instructions:
Serves 4-6, depending on how greedy your guests are!

It was included for the first time for newlyweds, Eric and Alex Baer, married on September 30, 2006. It is our first authentic Australian recipe from down under, and we thank Alex’s mom for this addition!

Instructions:
- Cream butter and sugar.
- Sift salt and flour and mix into creamed butter and sugar.
- Add grated rind and juice.
- Whisk separated egg yolks with milk and fold into mixture.
- In a separate bowl: Beat egg whites until stiff. Fold into mixture.
- Spoon into a greased ovenproof dish; place dish in baking tin half filled with water.
- Bake in a pre-heated moderate 350 degree oven for 45 minutes or until the sponge is set and golden on top.
