Eggplant Meatballs*
Meatball Ingredients:
1 lb. chopped meat
2 eggs
salt
pepper
finely chopped garlic
parsley
oregano
breadcrumbs
cheese
Instructions:
Mix all of the above ingredients well as you do for regular meatballs.
*Additional Ingredient for Eggplant Meatballs
1 lb. eggplant, peeled and diced (salt for ½ hour) then, parboil eggplant and squeeze as much water out as you can)

Origin of recipe: This was a specialty of Aunt Rose Pagliaro Amoroso and was shared with us for this collection by JoAnne Amoroso Thomas. Enjoy…these are great, and Aunt Rose loved to feed them to all of us! (Tracy even ate these also when he was little but never knew that he was eating vegetables!!)

Mix all of the above ingredients well as you do for regular meatballs.

1 lb. eggplant, peeled and diced (salt for ½ hour) then, parboil eggplant and squeeze as much water out as you can)
Instructions:
- Add to the meat mixture. Roll into balls and fry. After frying, drain on paper towels to remove excess grease.
- Place in a casserole dish and sprinkle the eggplant balls with sauce and cheese and bake for 15 minutes @ 400 degrees.
