Mexican Bean Salad

Origin of Recipe: Kelli Brady Aull shared this recipe after Wendy saw her children liked it. This is so easy to serve as a side on its own or with some chips to scoop it up.
- 1 can of black beans
- 1 can of kidney beans
- 1 can of cannelloni
- 1 green pepper chopped
- 1 red pepper chopped
- 1 red onion
- 1 can of corn
- 1/2 cup of olive oil
- 1/2 cup red vinegar
- 2 tbs of lime juice
- 2 tbs sugar
- 1 tbs lemon juice
- 1 tbs salt
- 1 Clove of crushed garlic
- 1/4 cup of chopped cilantro
- 1/2 tbs cumin
- 1/2 tbs pepper
- 1 dash of hot pepper sauce
- 1/2 tsp chilli pepper
Directions
- In a large bowl combine beans, bell peppers, corn and red onion.
- In a small bowl whisk together olive oil, red vinegar, lime juice, lemon juice, sugar, salt, pepper, garlic, cilantro. Cumin, . Season to taste with hot sauce and chilli powder.
- Pour olive oil dressing all over vegetables. Mix well. Chill for an hour and serve cold.
