Parmesan Chicken
Ingredients:
2 chicken breasts, skinned, boned, halved
salt and pepper to taste
2 eggs beaten
⅔ cup grated Parmesan or Romano Cheese
3 tablespoons butter and 3 tablespoons olive oil
lemon wedges

This one has become a real family favorite of all the Bingers! A real crowd pleaser...never a morsel left! We even made them when the family took a ski trip to Whisler-Blackhomb in British Columbia; everyone helped prepare these goodies at the condo we rented, and we had quite a feast in February of 2001. These are better than candy!

3 tablespoons butter and 3 tablespoons olive oil
lemon wedges
Instructions:
- Flatten the chicken with a meat mallet, cut the halves crosswise in two.
- Season with salt and pepper, dip the pieces in the beaten egg, coat with grated cheese. In a non-stick skillet, heat butter/oil mixture, sauté chicken for about 2 min. per side until golden brown.
- Garnish with lemon wedges and serve. Makes 4 servings.
