Oriental Salad
Ingredients:
1 head of Nappa lettuce, shredded (slawed)
(cut off base and wash very well; you can even use a lettuce spinner to remove all dirt.)
2 bunches of scallions, sliced with some greens
Set aside the lettuce and scallions in a large mixing bowl.
(The lettuce and scallions can be done the night before and placed in the refrigerator until the next day.)
Additional ingredients:
½ cup of butter
½ cup sliced almonds
¼ cup sesame seeds
1 package of Ramen noodles (only noodles will be used; discard rest of package.)
Dressing directions:
½ cup white vinegar
2 tablespoons of low-sodium soy sauce
1 cup of sugar
1 cup of extra-virgin olive oil

Origin of recipe: Nancy Elaine Binger who got this recipe from one of the cheering moms in Riverhead. This is definitely a crowd pleaser and great for a large group. Nancy has made this many times especially for bridal and baby showers as well as the family reunions, and this was a hit with everyone!

- Melt the butter in a frying pan.
- Break up the noodles into small pieces.
- Now sauté almonds, sesame seeds and noodles over low heat until browned.
- Be careful not to burn.
Dressing directions:
½ cup white vinegar
2 tablespoons of low-sodium soy sauce
1 cup of sugar
1 cup of extra-virgin olive oil
Instructions:
- Place first three ingredients in a small covered jar or container and shake well until the sugar dissolves fully.
- Now add the oil to the above ingredients and shake or whisk well.
- Finally, toss the nut mixture into the lettuce mixture and mix well.
- Just before serving, add the dressing and toss well.
