My Mother, Nancy Binger (nee Amoroso), hosts an Annual Cookie Exchange for her former co-workers from Deer Park School District. Fortunately, as a teacher myself and now a stay-at-home-Mom, I have been able to attend this delicious event. I'm not sure when she started this tradition. Probably, just after she retired from teaching at DPHS.
The first year my Mom told everyone to make 1 dozen cookies to exchange for each person attending. Not only was it A LOT of cookies...it took a long time to bake all of those cookies. Thankfully, she's adjusted the amount to 1/2 dozen cookies per person attending. This year we needed to make 6 dozen cookies.
So last night after all the kids were asleep, I was debating with my husband on what cookies I should make this year and whether or not I should do them now or in the morning. With a 6 year old, a 4 year old and a 2 year old, it is very hard to make 6 dozen cookies without being interrupted. I decided to sacrifice some sleep and make the cookies without any little ones around.
I asked him what his favorite cookie was and his reply was Shortbread. This was a surprise but now I know! It's 10:30 pm and a traditional shortbread cookie seems like a long process especially since I am starting this late at night while multitasking to do my son's laundry because he literally will only wear one pair of Nike pants that are his favorite and I can only wash them when he is sleeping. I searched and searched and found this recipe for Whipped Shortbread Cookies.
Well I stayed up till 1:00 am but it was worth it. It was easy to whip up the batter and piping the cookies was so much faster than having to roll something out or refrigerate and cut slices. I didn't have cherries or dragees so I just used some green sugar crystals.
It was late so I skipped the step-by-step photo process but there are a few shots pre-baking and post-baking. And little Delaney snuck into the kitchen in the morning while I was filling up my Gingerbread Cookie Box for the cookie exchange.
