Channeling my Inner Amoroso…
Every year my parents hold an Annual Christmas Get-together for my Father's side of the family. It usually is a brunch which I would say we've all become accustomed to and enjoy very much. However, this year for other circumstances beyond our control it had to be a dinner.
So my Mom asked me to make appetizers for the crowd. First, I chose to make Hummus Bi Tahini.
I actually prepared the Hummus Bi Tahini the day before and brought half the batch to the Cookie Decorating Day. The children were famished and ate every last bite before diving into the decorating process. It is so delicious with the fresh garlic and lemon juice. We always serve it with pita bread, crackers and carrots or other veggies.

I could not make this Hummus Bi Tahini recipe without my Cuisinart Food Processor. Usually I try to remember to chop the garlic up first before adding the chickpeas, tahini, warm water, olive oil and lemon juice. This way you make sure to get a finely minced garlic clove as opposed to a large chunky piece. But on the off chance that your forget, like I sometimes do, having a mini food processor like the Cuisinart Mini Prep Plus comes in handy.

Next I chose to make Buffalo Chicken Dip. I got this recipe from my sister-in-law, Kelli. I don't remember when she first made it but it has become a staple for our parties when we entertain. Both adults and children love it whenever we make it. And what's not to like...chicken, Frank's Red Hot Sauce, cream cheese, ranch dressing and shredded cheddar cheese....delicious!
And just as I was expecting it to be, it was a huge hit! The Baers had actually never had it before and couldn't stop going back for more…it was love at first bite. Plus I actually heard from Tina today that Olivia had tasted the Buffalo Chicken Dip for the first time at one of Rhiannon's birthday parties. It is one of her favorites and she's made it a few times already.
Not only do I love it when people enjoy what I cook, but it makes me so proud to hear that my niece loves to make it for friends and family as well. This is exactly the reason why my Mother started the Wedding tradition of passing on a family cookbook.

I used my Le Creuset cast iron skillet to make the dip. It is my go-to skillet when I am cooking in the kitchen. I know Le Creuset products may seem pricey but they are totally worth it in my opinion. It heats evenly and is a breeze to clean unlike my stainless steel pans. If you don't have any I would invest and build up a collection.
