Pepper Steak
This year I decided to make one of Brendan's favorite recipes for his birthday dinner, Pepper Steak. My Mom passed on the recipe in the Traditions Cookbook that she received from one of her long time friends, Kathy Fufaro. Brendan doesn't like tomatoes so I usually leave them out or add an extra pepper.
Start by cutting the steak into 1 inch pieces. Then brown in oil for 3 minutes.

Mix in the next 5 ingredients in a cup and pour into pan over meat. Cook for 5-10 minutes and cover.
A silicone garlic peeler makes it super easy to peel your garlic cloves. A stainless steel food scoop makes is helpful to grab all that garlic in one scoop.

Slice peppers and tomatoes and add to pan. Feel free to use red, yellow and orange peppers which is what I had on hand this time. As I said, I like tomatoes but my husband does not so I left them out tonight. Cover and cook for 30 minutes on low.
Serve over rice. For our family of 5, I use this 8-cup rice cooker for easy preparation all the time. But you could easily use a 4-cup rice cooker if you have a smaller family.
